So, could you please guide on this and also is the Open edX a MIT license and if so, are there any limitations and/ or restrictions to it.

We use the AGPL license: edx-platform/LICENSE at master · openedx/edx-platform · GitHub

I recommend your organization does research on this license to see if its restrictions are compatible with your intended uses.
