I am the new instructional designer of my organization, may I know if there are any user menu(s) for how to use the platform? (e.g. sample codes, how to locate the analytics, how to set up the course page etc…)

there are lots of official and unofficial manuals to help you with using open-edx.
for example this is an official document about Creating a Course.
