Verawood is a fantastic choice! It brings to mind strength, endurance, and natural beauty - qualities that align perfectly with the goals of Open edX in providing a robust and reliable learning platforms. This name would set a strong tone for the release!
Another thought: Viburnum. A number of species with showy fruits and flowers, and found around the world. Main downside that I can see is that the spelling may be unintuitive.
